If you are planning a trip to Las Vegas and looking for the ultimate dining experience, you have probably already heard the whispers about Carbone Riviera. Let me tell you right now: this is currently the absolute toughest reservation to get in Las Vegas.
I recently celebrated my birthday in Vegas, and to say I was determined to get a table here is an understatement. I found myself obsessively scrolling and refreshing their website every single day just hoping for a cancellation. To understand the hype, you have to know what this space represents. Carbone Riviera has taken over the legendary, Michelin-starred Picasso space inside the Bellagio.

A quick pro-tip before we dive in: Do not confuse this new concept with the original Carbone restaurant that has been inside the Aria Resort for years. While they share the same DNA from Major Food Group, Carbone Riviera is a completely new, coastal-inspired beast. And if you are incredibly lucky—like I was—you might just find yourself seated on the Riviera Deck, taking in a breathtaking, prime view of the iconic Bellagio Fountains Show.
Here is everything you need to know about the vibe, what to order, and my secret strategy for scoring the best seat in the house.

The Concept and Vibe: Coastal Italian Glamour

When you step into Carbone Riviera, you are transported to the sun-drenched European coast. The concept is a masterful interpretation of Italian coastal cuisine, wrapped in mid-century Mediterranean elegance. The space leans heavily into beautiful terra cotta and azure tones, drawing inspiration from Picasso’s years on the French Riviera (and yes, they kept some of the original Picasso artwork!).
The restaurant is divided into three distinct sections, which is crucial to know when booking:

- The Main Dining Room: This is the gorgeous indoor space and, realistically, the most likely option you will get when you finally secure a reservation online. The classy vibes here are immaculate, complete with Murano chandeliers and stunning archways.
- The Patio: This is an outdoor dining section, but there is a catch. It sits directly behind the Riviera Deck, meaning your view of the Bellagio Fountains might be obstructed by other tables and structures.
- The Riviera Deck: The crown jewel of the restaurant. This premium waterfront seating gives you a front-row, unobstructed view of the fountain show and the lake.

Important Note: If you want to sit outside on either the Patio or the Riviera Deck, the restaurant enforces a strict $175 minimum consumption per person. In Vegas fine dining, hitting that number is easy, but it is something to be aware of!
The Menu: A Non-Seafood Guy’s Review

The main focus of the Carbone Riviera menu is high-end, global seafood. However, I’ll be honest: I’m not much of a seafood guy. The good news is that they have plenty of other incredible options. Here is a breakdown of what we ordered—the hits, the misses, and the absolute must-haves.
Calamari Fritti

Easily the best fried calamari I have ever had in my life. What I appreciated the most was that they skipped the typical, boring tomato marinara. Instead, it was served with an incredible spicy sauce that elevated the flavor profile to a completely different level. It was the perfect way to kick off the meal.
Caesar a la ZZ

If you love dinner and a show, you have to order their tableside Caesar. The preparation is fantastic, but the taste is even better. The creamy sauce was rich and perfectly balanced, but the real surprise came from the croutons. They had a spicy kick to them that elevated the entire salad.

Spicy Rigatoni Vodka

This is the signature pasta and undoubtedly the most popular dish across the entire Carbone brand nationwide. Even at this new Riviera location, it lives up to the hype. It is one of the best pastas I have ever eaten—wonderfully spicy, incredibly creamy, and packed with an unbelievable amount of flavor. It is an absolute must-do.
Filet Mignon

For our main course, we decided to try the steaks. I ordered the Filet Mignon, and truthfully, it was just okay. It tasted good, and there was nothing technically wrong with it, but I have certainly had better steaks on the Strip. If you are going to Carbone Riviera, I wouldn’t say the filet is the star of the show.
Veal Milanese

My brother ordered the Veal Milanese, and it completely stole the spotlight from my steak. If you enjoy veal, this is a massive upgrade from the Filet Mignon. The breading was perfect, the meat was tender, and the portion was massive—you can easily share this dish with at least one other person.
How to Score a Reservation and Sit on the Riviera Deck

Getting into the restaurant is half the battle; getting the best seat is the other. As I mentioned, I had to secure a reservation by checking the website daily. To no surprise, my initial booking was for the main dining room. I kept checking the portal every day to see if an outdoor opening popped up, and eventually, I was able to snag a table on the Patio.
But I really wanted that unobstructed fountain view. Here is the ultimate strategy that worked for us:

Arrive one hour before your reservation. We walked up to the host stand a full hour early and politely asked the hostess if there was any chance we could be seated on the Riviera Deck instead of the Patio. She was incredibly nice and actually found a way to snag a table for us! The catch? She told us we would need to come back one hour after our original Patio reservation time.
We happily agreed, grabbed a drink nearby, and came back at the new time. We were seated right on the Riviera Deck, and it led to an unforgettable birthday experience.
Final Thoughts about Carbone Riviera

If I am being completely objective, the food was good, but it wasn’t the most memorable culinary meal of my life. However, I dare to say that Carbone Riviera has been the most impressive restaurant I have ever been to in Las Vegas.
The ambiance is simply unmatched. Sitting on the Riviera Deck, feeling the energy of the Bellagio Fountains erupting right in front of us, and looking out at the absolutely stunning $3 million Riva yacht docked on the water was pure magic. That fountain view is something I will never forget. Even if the steak was just “okay,” the unparalleled atmosphere and exclusive vibe make Carbone Riviera an absolute must-visit on your next Vegas trip.
